Quality

Despite the introduction of new and modern distillation methods, preserving and improving the quality of the distillates has top priority at the distillery Unterthurner.
To achieve this, purchasing first-rate – sound and ripe – fruit is paramount. Where possible, the fruit is obtained from the South Tyrol region, where it ripens wonderfully until autumn. For example, the raspberries for the wild raspberry spirit ,“Priami”, come from the “Durster” mountain farm above Partschin in the lower Vintschgau region.

The apricots for the Vintschger Marilleler are also from the Vintschgau region.
The elderberries come directly from Marling, above the famous Marlinger Waalweg. We get the plums for our plum spirit and our plum liqueur from the Wegerhof farm in Graun, above Tramin.

When they are ready and picked, all our fruits are taken from the farm to our distillery and carefully fermented under the watchful eye of our cellarmaster Martin Sölva, and then discontinuously distilled in copper pot-stills.

The yield is not always so rich. Especially for fruits which are low in sugar, such as rowanberries, quince or blackthorn, each drop is precious. After a suitable storage period, either in a stainless steel or barrique barrel (for a minimum of one year), the exquisite liquid is bottled and the result is distillates with a distinct aroma and flavour.
